Cake Mix Cookie Bars

These are so easy and delicious! I found this recipe on Pinterest from a blog. And here it is!

Here’s what you’ll need:

1 Box yellow cake mix
1 Small box instant vanilla pudding (3.5 oz)

1/4 Cup water
3/4 Cup canola oil (can use vegetable oil)
2 Eggs
1 Cup chocolate chips or M&M’s (plus an additional 1/2 cup to sprinkle on top if you want)
Sprinkles of choice (optional)

And here’s how I opted to cook today…recipe open on one side of the screen, and The Land Before Time II: The Great Valley Adventure going on the other side of the screen…

Okay, now let’s get cookin’!
1. Preheat oven to 350 degrees
2. Combine cake mix, pudding, water, oil, and egg in a large bowl.
3. Add chocolate chips or M&M’s
4. Add sprinkles. I used Valentine’s Day sprinkles!
5. Spray a 9×13 baking dish/cake pan with nonstick cooking spray
6. Pour the THICK batter into the baking dish/cake pan (here is where I put extra chocolate chips on top)
7. Bake for 20-30 minutes, or until toothpick inserted into center comes out clean.
8. Let cool for about 20-30 minutes
9. Slice and enjoy!

Trail Mix

I don’t like raisins in my trail mix (unless they’re covered in chocolate)…and most of the ones you buy at the store have raisins in them…so I decided to make my own!

Find a grocery store near you that sells food in bulk – for me, that’s Win-Co! And I don’t mean Costco bulk…well, I guess that could work, but I’m talking about when they sell it in bins and you scoop out what you want into a bag.

Get what you want, mix it all together, and ta-da! Personalized trail mix with only the things you like!

Here’s how I made mine: {I also included how much each cost}

6 dried pineapple rings, sliced (a little under 2 cups) {$1.39}DSC08302
2 1/2  cups cashews {$5.46}
2 cups chocolate-covered raisins {$2.58}
1 cup sunflower seeds {$0.48}
2 cups craisins {$1.83}
2 1/2 cups peanuts {$1.34}
4 1/2 cups banana chips {$1.34}
2 cups M&M’s {$2.98}

What you do:
1. Mix it all together in a HUGE bowl.
2. Separate it into snack-size baggies.

This is so easy! It only took me about 15 minutes to put together.

The above recipe makes 18 snack-size baggies, which came out to a total of $0.96 per bag. Kinda pricey, come to think of it. But if I’d left out the expensive cashews, it would have been only $0.66 per bag, which is better. But I just love cashews!

These are so easy for on-the-go snacking.

Reindeer Cupcakes

Merry Christmas!

These are some of the easiest cupcakes ever!

For each cupcake, you will need:

  • chocolate cake mix
  • chocolate icing
  • two mini pretzels
  • one Nilla Wafer
  • one brown or one red M&M
  • two white M&M’s
  • black gel icing

Here’s what you do:
1. Make the cupcakes according to directions on the box.
2. After they are cool, frost one cupcake.
3. Add a Nilla Wafer for the face.
4. Add two pretzels for antlers.
5. Dip one side of the brown or red M&M in the frosting.
6. Place it on the Nilla Wafer for a nose.
7. Put the two white M&M’s on for eyes.
8. Using the black gel icing, put a small dot on each white M&M to finish the eyes.
9. Repeat with the rest of the cupcakes.

Friendly tip: Don’t frost all the cupcakes first, and then expect to go back and add the toppings. The icing will harden as you go, so do each cupcake right after you frost it. 

Where do I find white M&M’s? Well, I got mine at a party supply store, Zurchers. They have M&M’s there that you can buy by color. So I’d suggest checking with your local party supply store. If you can’t find them, you can also just use upside-down white chocolate chips!

Easter Bunny Cupcakes

I made these cupcakes for Easter!

Wanna make them, too?

You will need….

Cupcakes

Icing (https://byuflamingo.wordpress.com/2012/05/06/buttercream-icing/)

Mini M&M’s (2 per cupcake)

Mini marshmallows (2 per cupcake)

Large marshmallows (1 per cupcake)

Shredded cocunut

Pink sugar sprinkles

Black writing gel icing

Pink jellybeans (1 per cupcake)

Once you’ve got all that stuff, you will…

1. Make the cupcakes! I always like Funfetti.

2. Ice the cupcake

3. Dip the cupcake into a bowl full of shredded coconut.

Now you have bunny fur!

4. Cut the large marshmallow in half on the rounded side

This will give you the ears!

5. Dip the sticky part of the marshmallow into the pink sugar sprinkles

You now have cute little bunny ears!

6. Put a bit of icing on the back of the ears to put it onto the cupcake.

7. Put a pink jelly bean on for the nose.

8. Put on two mini M&M’s for the eyes

9. Put some icing on the mini marshmallows before putting them below the nose on the bunny.

As a side note, make sure the marshmallows are the same size…this is not ideal:

10. Put little black dots on the mini M&M’s for pupils!

11. If you want, you can use the black icing for whiskers. I didn’t like it, but if you do, go ahead!

I decided that I only like using blue and green for eyes…red looks evil.

Moral of the story: these are great for Easter!
