Reindeer Cupcakes

Merry Christmas!

These are some of the easiest cupcakes ever!

For each cupcake, you will need:

  • chocolate cake mix
  • chocolate icing
  • two mini pretzels
  • one Nilla Wafer
  • one brown or one red M&M
  • two white M&M’s
  • black gel icing

Here’s what you do:
1. Make the cupcakes according to directions on the box.
2. After they are cool, frost one cupcake.
3. Add a Nilla Wafer for the face.
4. Add two pretzels for antlers.
5. Dip one side of the brown or red M&M in the frosting.
6. Place it on the Nilla Wafer for a nose.
7. Put the two white M&M’s on for eyes.
8. Using the black gel icing, put a small dot on each white M&M to finish the eyes.
9. Repeat with the rest of the cupcakes.

Friendly tip: Don’t frost all the cupcakes first, and then expect to go back and add the toppings. The icing will harden as you go, so do each cupcake right after you frost it. 

Where do I find white M&M’s? Well, I got mine at a party supply store, Zurchers. They have M&M’s there that you can buy by color. So I’d suggest checking with your local party supply store. If you can’t find them, you can also just use upside-down white chocolate chips!

Thick, Soft Sugar Cookies

I have officially found the PERFECT sugar cookie recipe!!!
They seriously melt in your mouth!

And it’s so easy! And it doesn’t need to chill!
If  you like thick, soft sugar cookies, then this is the only recipe you need.
The trick is to roll them out thick and bake them for less time than you think they need.
As far as how many cookies this makes, it really depends on how big your cookie cutters are. Mine were really varied, and each batch made about 40 or 45 cookies.

Even the icing recipe is perfect!

But we’ll start with the cookie recipe…

Here’s what you’ll need:
1 cup butter
2 cups white sugar

2 eggs
3 teaspoons extract
*for classic sugar cookies, use 3 tsp vanilla extract 

*for vanilla-almond cookies, use 1 tsp vanilla extract and 2 tsp almond extract
*for peppermint cookies, use 1 tsp vanilla extract and 2 tsp peppermint extract
1 cup sour cream
1 teaspoon salt
2 teaspoons baking soda
5 1/2 cups flour

Here’s what you do:
1. Preheat oven to 375 degrees.
2. In mixer, cream butter and sugar
3. Add eggs
4. Add vanilla
5. Beat well
6. Mix in the sour cream
7. In a different bowl, combine the flour, baking soda, and salt.
8. Mix flour mixture into butter mixture (if it is too sticky to roll out, add more flour…1/4 cup at a time, until it’s good enough to roll out)
It was at this point that I really wanted a Kitchen Aid, because my wooden spoon broke! I couldn’t believe it! I mean, it was getting old, but seriously?! Luckily I have other wooden spoons…but I still want a Kitchen Aid really badly…
DSC080939. Roll out on floured surface to about 1/4 to 1/3 inch thick. Really.
DSC0809110. Place on cookie sheet. You can put them pretty close…mine were probably between an inch and 1/4 inch apart…
11. Bake for 7-8 minutes.THEY WILL NOT LOOK DONE! But don’t give in to your temptation to cook “just a little bit longer” or you will get crunchy cookies instead of soft, pillow-like cookies.

They are still very pale and have no browning anywhere. If you have a golden brown color along the edges then you have baked them too long.

12. Wait about 5 minutes and then transfer carefully to a cooling rack. If you wait longer they will get soggy on the bottom.
13. Frost with icing (see recipe below) and decorate with sprinkles!

Now it’s time to make the icing!
I used a handheld electric mixer, because that’s what I have. My cooking buddy and best friend Michelle made this recipe, and said she used her Kitchen Aid and whipped the icing for 5 minutes and it turned out delicious. So it just depends on if you want whipped icing or regular! I prefer regular, but if you want whipped, then whip away!

Here’s what you need:
1/2 cup butter, softened
4 cups powdered sugar
2 teaspoons extract
*for classic sugar cookies, use 2 tsp vanilla extract.
*for vanilla-almond cookies, use 1 tsp vanilla extract and 1 tsp almond extract
*for peppermint cookies, use 1 tsp vanilla extract and 1 tsp peppermint extract

1/4 to 1/3 cup milk

Here’s what you do:
1. In a mixing bowl, cream the butter.
2. Mix in the vanilla
3. Mix in the sugar until crumbly.
It will look something like this…

4. Gradually add milk until frosting reaches desired consistency
5. Add food coloring of your choice, if you so desire.
6. Frost your cookies!

I collect sprinkles…I seriously LOVE them. If you are feeling generous, but you can’t afford to buy me a Kitchen Aid, then sprinkles will always make me happy! (Update: I have a Kitchen Aid now! Read about it here!)

Its really that simple! And they turn out perfect every time. TRUST ME…I MADE THREE BATCHES IN FOUR DAYS.

I know, that’s a lot! But I made them last Sunday just to try out the recipe. My friend Jacey and I baked them, and then my friend Cara and I decorated them. And then I made them on Tuesday so I could bring them to my ASL class on Wednesday…and I made them again on Wednesday so I could bring them to my CPSE 463 (Assistive Technology for Students with Disabilities) class on Thursday….so there you have it…3 times in 4 days! They’re just so good, I want everyone to have some!!!

If you bake as much as I do, then you will definitely want tons of flour from Costco…I also get my powdered sugar, vanilla extract, and butter from Costco…things I always use when cooking!

Chloe’s Closet: Day 48

A lot to say today!

We’ll start with my outfit….Sheridan took my pictures!

How do ya like my sunburn?

Sheridan said we were going to do “Senior Picture” style pictures…it was great. 

The tights are from Kohl’s and the undershirt is from Shade…that’s all I know…

Okay so that’s my outfit…now let’s start from the beginning…a very good place to start…

Jenna and I left her house around 6:30, and got back to Provo around 8:30 for Jenna’s meeting. I had a meeting at 10:30, and then I had church from 11:40-1:40. And then I had to do some stuff for my calling…which I love!!

When I got home, I called my dear mother. It is Mother’s Day. I love my mother.

When I was born, she gave up almost everything she had just to keep me alive. It was only me and her. And I love her for it. She is a true example to me of faith and righteous sacrifice.

My mother has had a super hard life. I don’t know what I would be like if I was her. She has had so many rough times, and those rough times have not stopped. I hope they will some day, but I don’t see when. Regardless, my mom is such a protector. She loves all 7 of her kids with all she has, and would rather be with us more than anything else. She is so great.

My mom taught me the importance of service. I don’t remember much from before I was 16, with the exception of things my mom scrapbooked pictures of. I love to look at the scrapbooks my mom made of my life. They remind me of the things that I did because I cannot seem to remember them on my own. I am so grateful that she is so creative as well. She is a quilter (even though she is out of practice as of late), and she used to always make us quilts. The blanket I sleep with every night is one my mom made. I call it my cat blanket, because simply, it has cats on it. Oh, and it’s super colorful!

My mother has always stressed the importance of getting a college education. She did not take the opportunity to get an education, and she now regrets that. She is in a situation where she is stuck, and having a college education would definitely help her out of it. My superb mother has always made sure I wanted and succeeded in getting a college education. It’s ingrained in my mind now! I love it! Just about every time I talk to her, she reminds me of how much she wants me to have an education. I know it’s important to her, and it’s important to me, so I’m working hard!

My mom is the funniest! She is always finding ways to make me laugh. My siblings do the funniest things and my mom sure makes them even funnier. She is such a kid! She’s often helping us think of fun pranks or things to do. All my friends love my mom – she’s like one of us! Haha she’s so great. I always tell my roommates what we call “mom stories”, which is just when I tell them a story about my mom….whether it’s a memory I have, or something she told me recently. It’s always a good laugh! My ward even hears a lot about my mom – I often talk about her! I just can’t help myself!

My mom is so cool…she tries to teach me the art of folding a dollar bill into a bowtie. She always does it when she leaves tips. 

My mom is so cool…she’ll push your face into a cake….when you least expect it…

My mom is cool….when she pushes your face into a cake, you just might end up with cake on your face…okay you definitely will…

My mom is so cool….she takes her oldest child and her two youngest children out at midnight to flock someone’s house. That means you put plastic flamingos all over their yard!

My mom is so cool…when she wants the middle piece of a cake, she takes the middle piece of a cake. (can you see the top indent where she smashed Sevannah’s nose into it? bwa haha!)

My mom is so cool…she is such a great example of faith. She turned this picture into something more meaningful by just using a Sharpie.

My mom is so cool…she has a Santa suit.


My mom is so cool…on Christmas 2008, it was just me and her. She dressed up as Santa and came into the room….it was hilarious.

My mom is so cool…she uses packaging tape to fix holes in her water-bed.
My mom is so cool…when they boys’ shirts get a hole in them….she sticks her finger in it and rips it so it’s a big hole…that way they won’t wear it anymore. 

My mom is so cool…she always loves to have a picture of Jesus Christ in sight…so they’re all over the house. 

My mom is so cool…she has THE BEST fridge magnets!



My mom is so cool…she cuts onions wearing swimming goggles and gloves…so she doesn’t cry….and the kids do it, too.


My mom is so cool…for so many reasons.

I love my mother. And she loves me. And we both love our Heavenly Father. He helps us though so much. 

My goal from last week was “find time to be still” and I think I did an okay job with it. I am going to do it for one more week, though. I know I can do better.

Chloe’s Closet: Day 39

Tonight, Jenna and I went down to the basement of the McKay building to make copies for stuff…and on the way out…I noticed a sign on some cabinets.
So we violated the sign’s instructions.
We felt so bad….it was great.
And as we were walking away, Jenna said “Can I take your outfit pictures?”
And I said “Yeah, let me undress first.”
And we both paused.
And then we both laughed hysterically.

What I MEANT to say was that since I was wearing my coat and scarf, we should get a series of pictures in which I take them off to reveal my outfit!

And here’s where I’ll tell you about my outfit. The shirt is from Old Navy, it was only $3! The jeans are from Kohl’s. The scarf is from…..I don’t remember. The jacket is from Old Navy! I got it for Christmas 2 years ago from the Schillers! The hat I got on clearance at Claire’s last year. The shoes, I’m pretty sure my mom got them for me. The necklace, I got in Mexico when we went on a cruise. The bracelets, some I made, some I’ve just had forever, as usual, I’m not quite sure. 

That’s the sign we saw and we violated the instructions of. While we were blocking the cabinets (before the idea of outfit pictures with it ever popped into our minds) we had fun. You see what happened was, we were getting ready to leave the building. But then I noticed the sign and said “let’s block the cabinets!” So we smooshed ourselves against the cabinets like Kronk does in The Emperor’s New Groove. And I turned to Jenna and said “do you feel baaaaaddd??!!” And she said “not quite yet…” and I said “okay…………………………………….how about now?” And she said “yeah, I feel baaaaaaaaaaddd!!”
Moral of the story: we’re so bad.
