Here’s what you’ll need…
8 ounces uncooked rigatoni pasta
1 can (15 ounces) white kidney (cannellini), Great Northern, or navy beans, rinsed and drained
1 can (14.5 ounce) Italian-style stewed tomatoes
6 ounces light cooked smoked sausage or turkey sausage, sliced ½ inch thick
1/3 cup finely shredded or snipped fresh basil
¼ cup shaved or finely shredded Asiago cheese (1 ounce)
Here’s what you’ll do…
- Cook pasta according to package directions, drain, cover and keep warm
- Meanwhile, in a large saucepan combine beans, undrained tomatoes, and sausage
- Heat through
- Add mean mixture and basil to cooked pasta
- Toss gently to mix (or just stir it…)
- Sprinkle each serving with Asiago cheese
