Sausage and Bean Rigatoni

Here’s what you’ll need…

8 ounces uncooked rigatoni pasta

 1 can (15 ounces) white kidney (cannellini), Great Northern, or navy beans, rinsed and drained

1 can (14.5 ounce) Italian-style stewed tomatoes

6 ounces light cooked smoked sausage or turkey sausage, sliced ½ inch thick

1/3 cup finely shredded or snipped fresh basil

¼ cup shaved or finely shredded Asiago cheese (1 ounce)

 Here’s what you’ll do…

  1. Cook pasta according to package directions, drain, cover and keep warm
  2. Meanwhile, in a large saucepan combine beans, undrained tomatoes, and sausage
  3. Heat through
  4. Add mean mixture and basil to cooked pasta
  5. Toss gently to mix (or just stir it…)
  6. Sprinkle each serving with Asiago cheese
